Deliciousness...!

I found this on my favorite cooking blog and had one thought...YUM.  I made it about a month ago and it was indeed YUM.  So I am passing it along to you...

Peanut butter Pie

Ingredients for crust
1 1/2 cups graham cracker crumbs (I like to make it a nice texture, not powdered and yet not with huge crumbs)
1/3 cup sugar
6 T. melted butter

Mix together and press into a pie pan.  Bake at 375 degrees for about 8 minutes.  Let cool while you make the filling.

Ingredients for filling
2 cups heavy whipping cream
1 cup peanut butter (preferably smooth!)
4 oz. cream cheese
3/4 cup sugar
1 t. vanilla
1 cup chocolate chips (totally optional)

Whip the heavy cream and set aside.  Cream together the peanut butter, cream chesse and sugar.  Add the vanilla.  Fold in the whipped cream into the peanut butter mixture.  Option: scatter about 1/2 cup of chocolate chips on the crust, then fold the filling into the cooled crust.  Scatter the rest of the chips on top and chill a few hours before serving.  

NOTE:  I would not reccomend putting whipped cream on top of the pie.  It is very rich and creamy on its own!
